Thinking Ahead: My Middle Names

So, I’m realizing that my Time Of Feeling Really Crappy is fast approaching.  Tonight, I’m going to bake a batch of strawberry cupcakes and tackle all the laundry in the house with one hand tied behind my back, that’s how awesome I’m planning on being.  (I have to take advantage of it while I’ve still got it.)

I need to come up with a super organized gameplan for the next three weeks: a gameplan in which everything around my house gets done in a timely and orderly fashion.

Does anyone have any recipes that freeze really well?  I think I need to get some stuff in my freezer in case I feel too gurbly and making dinner doesn’t happen.  I know I have Lasagne and Chicken Broccoli Casserole recipes that freeze well, and they worked great after I had surgery.  And I’m going to freeze up some cookie dough for Joey so he doesn’t suffer from lack of tasties while I’m suffering from a lack of…vitality.

So I’m thinkin…maybe I need to get awesome this weekend and prep a buncha stuff.

Make lists.

I LOVE MY LISTS.

Poor Joey, he’s married to a list maniac.  However, I will have you know that he’s started a weekend to-do list of his own accord; I found it by his desk.  It warmed my heart to see how I’ve brainwashed him.  I will also have you know that our weekends have gotten off the charts more productive since that list first appeared last month.  It totally amazes me.

Anyway, Internet, if you have a casserole or any other kind of recipe that freezes well, send it on over.  I’m going to jam my freezer so full of planning-aheadedness that it will tremble when it sees me coming.

I'm a neat freak. I like all-natural, chemical-free, environmentally-friendly products. Green is my favorite color. Still.

  1. I understand fully the list mania thing!! I just crave making a list sometimes. How else do I get to check off what I have accomplished. It is a celebration!
    Hey chicken pot pie works well! And shredded meats to make sandwiches or to put on rice or baked potatoes. Also that mac ‘n’ cheese off of Pioneer Woman website. Hey she has a cookbook out now! Merry Christmas to me, honey! hint, hint I might have to hint harder though with him.

  2. The only things i know that freeze really well (that actually make it to our freezer) are soups and some sauces. If you are interested in one, let me know.

    • Loving the soup feedback! I never thought of those, but I will definitely be putting chicken soup and chili in my freezer!
