Bake-Off Saturday

Bake-Off Saturday

Who am I going to be baking off on Saturday?  Oh no one, really.  Just myself.  Tomorrow, I plan to get four full meals packed away into my freezer.  Thanks to the suggestions of muchos of my amigas, I am doing lots of soups.  I never would have thought of soups, girls.  NEV-AH.

Joey’s going to be up in Wylie filming a wedding, so I’ll have the entire evening to destroy my kitchen.  I can envision onion peel on the floor, pressed garlic skins littering the counter, and tomato sauce sloshed all over the stove.  I am not a tidy cook.  I really wish I was, but I’ve tried and it can’t be helped.

I was all organized in grocery planning, except for two areas:

  1. I forgot to include the ingredients for the Mexican Rice I’m baking for Sunday evening, we have a small group potluck.  It will be amazing.  But unfortunately, I will have to go back to the store for tomatoes and a jalapeno, because I DO NOT HAS.  <sigh>  I knew I’d forget something.
  2. In my hormonally-altered state, I had Joey buy nine carrots.  NINE CARROTS.  We already had about seven carrots in the fridge, which I failed to inventory before we left, so now we have something like sixteen carrots in my refrigerator.  I have no idea where to begin with sixteen carrots. (Does anyone have a herd of rabbits I could borrow?)  I need about four for the recipes I have planned, which is another reason why I can’t figure out what possessed me to tell Joey to get nine carrots.

And now, I’m all cranky and whatever so I’m going to bed.  My house is clean, my groceries are purchased (well, except for the stuff I need for Mexican Rice, but nobody’s perfect) and I’m shot.  I don’t have to get up early for anything tomorrow, so I’m going to sleep until I decide to wake up, then Joey and I are going to go on a long, long bike ride.  I need to hit Sur la Table to get Sister’s birthday present (but not that KitchenAid with the glass bowl, Sister, sorry; I can’t afford that even if I saved for 200 years) and it’s the perfect Saturday morning bike ride distance.

Tangent because I’m tired — what is up with this awesome weather we’ve been having?  The roses are still blooming.

I really am going to bed.

NINE CARROTS?!

Joey is my best friend. We welcomed our miracle baby, Analie Alexa on November 23, 2010. She was 7 lbs of cuteness and we are so thankful for her. We lost our first baby (who we symbolically named Samuel) the summer of 2009. I love being a Christian, even when it's hard. I've tried IVF. Twice. It worked. Once. That's how we got Analie. I'm always willing to talk about infertility. Diagnosis: Stage 4 Endometriosis (plus a few other bonus things) I'm live in Indiana. I enjoy reading and going for walks in the evening. I get my news from NPR. Someday I want to be a guest on Wait, Wait, Don't Tell Me. I love backpacking, hiking, canoeing and survival camping. I'm a big fan of weekends. My bike's name is Thunder. I'm a youth pastor's wife. I dig cows. I don't handle stress well. I'm not good at fishing; I talk too much. Cooking and baking are my favorite. I love hanging out with my girlfriends! I'm a budding environmentalista. I love me my Joey. Texas is where we "came of age". I enjoy seeing animals and want my very own Alpaca. And Koala. And Panda. Conservation is beautiful. I'm a neat freak. I like all-natural, chemical-free, environmentally-friendly products. Green is my favorite color. Still.

  1. Make carrot cake or carrot cupcakes with the carrots. That way you won’t waste carrots and you will have a yummy treat.
