I’ve been meaning to try this recipe for about a year now, and just keep forgetting about it; but no longer!  I think it’s going to wind up in the regular rotation of our meals, such as it is.  I was thinking the other day that we don’t really have a rotation…just kind of a hodge podge of whatever sounds good at the time I’m setting menus for the week.

Anyway, this pork recipe is brushed with a garlic oil right before throwing it on the grill.  It’s so flavorful and juicy that your tastebuds just might throw a party in your mouth.

Mine did.

Grilled Pork Cutlets with Lemon-Garlic Sauce

From The Best Simple Recipes; serves 4

1/4 cup extra virgin olive oil

2 teaspoons paprika

1 teaspoon sugar

1/4 teaspoon red pepper flakes

6 garlic cloves sliced thin

3 tablespoons lemon juice

2 tablespoons finely chopped fresh parsley

salt and pepper

8 thin cut pork cutlets (about 1 1/2 lbs)

1. Combine the oil, paprika, sugar, pepper flakes and garlic in a bowl and microwave until bubbling, about 1 minute.  Reserve 2 tablespoons of garlic oil in a separate bowl, then whisk lemon juice and parsley into the remaining oil and garlic mixture, season with salt and pepper.

2. Pat cutlets dry with paper towels and season with salt and pepper.  Rub cutlets all over with reserved garlic oil.  Grill pork over hot fire until lightly charred on the first side, about 2 minutes.  Flip cutlets and grill until just cooked through, about 1 minute longer. (OR whenever your pork piece reaches 160 on an instant read thermometer.)  Transfer to platter, tent with foil and let rest 5 minutes.  Drizzle with sauce.  Serve.
